Coconut Chia Pudding With Blueberry Compote

I’ve searched for YEARS for a good recipe for a coconut chia pudding ever since I had an amazing one in New York at Broken Coconut, but never knew the recipe. I then have tried so many concoctions and it was never quite right, and then someone gave me a tip! The secret to it is coconut milk in a can! I have always used the refrigerated one and it’s ok, but always a little runny, and just a different consistency. One thing to note about most of my cooking is that a lot of times I sweeten and season to taste, so I never have accurate measurements, but I tried my best to get it right to share with you!

Coconut Chia Pudding

1 can of coconut milk (I try to get one that is pure with no extra chemical emulsifiers)

6 tbsp chia seeds

1 tsp vanilla extract (my preference is Madagascar Vanilla as it’s more flavorful and potent… and only use pure, no imitation)

1-2 tbsp real maple syrup

I’ve made this a couple ways, and I have added a few splashes of the almond coconut milk that you see below, just to add a little liquid to it… it’s your preference.

Once all mixed together, you need to let sit and refrigerate for a few hours or overnight. This allows the chia seeds to expand, otherwise they are small and crunchy.

Then, another special little secret sauce is the blueberry compote. I tried a few different recipes out there and am sharing the one I think tastes best, tweaked a little bit by me.

Blueberry Compote

1 cup fresh or frozen blueberries

2 tbsp water

1 tbsp + 1 tsp cane sugar (this is where I measure to taste)

1 tbsp lemon juice (about a half of a lemon)

simmer on low over the stove until it becomes a liquid consistency with a few lumps of blueberries. You can serve it hot while it’s liquid or wait until it cools and it kind of becomes jellylike which I personally like. Then serve over the top of the chia pudding.

You can eat the chia pudding without the blueberries, and add other things on top like granola or walnuts, both of which I have tried. The blueberry compote adds a dessert-y sweetness and makes it extra special!
